ISS have partnered with Winnow to find a solution using technology for auditing food wastage.
With multiple devices in place ISS have been able to audit food waste from both over production and from plate waste.
Using AI the devices are able to identify the food items to record, track, change and reduce waste.
Following the initial implementation of the system a baseline was identified and with continued support from Winnow each team are able to work towards set targets of reduction of waste.
Information is shared with Food Service teams for education and changes in practice.
Food waste is diverted from landfill and instead reused through the organics stream.
Using the Winnow portal, ISS can review performance by summary, time of day and site comparisons.
On an adhoc basis a targeted analysis of plate wastage is conducted to review what is not being consumed.
Along with patient satisfaction surveys this process helps us to ensure menu choices are appropriate for certain patient demographics and make changes to menu choice as required.
