Cheryl Hughes
Cheryl Hughes is the Director of Facts on Food, a food technology and food safety consulting business established in 1998. Cheryl is a qualified Food Technologist with experience across all food industry sectors including foodservice, smallgoods, seafood, meat, dairy and produce, providing consultancy services that includes food safety program development and management, labelling, process development and shelf life validation. Cheryl is also registered as a Food Safety Auditor with Exemplar Global.
Cheryl has developed, implemented and managed food safety programs within manufacturing and foodservice operations for more than 25 years. During this time, she has provided technical advice and support and undertaken the validation of food safety programs.
Cheryl has extensive food safety experience with food service for vulnerable populations in public and private hospitals throughout Western Australia. She has worked alongside Catering Managers, Chefs and their teams, with a focus on the safety of short shelf life and extended shelf life cook chill operations, and re-thermalisation processes.
She is a Fellow of the Australian Institute of Food Science & Technology, and a member and current Chairperson of the Western Australian Branch of the Institute of Hospitality in Healthcare.
Cheryl was one of the technical reviewers of the updated Blue Book and will discuss how this resource can be used to assist cook chill businesses.
