David Martin Victorian & NSW Executive Chef Manager & Hotel Service Manager at St Vincent'sCare David has over 19 years of experience in Fine Dining Restaurants and Hotels. Now with particular focus on the Aged Care Sector for the past Nine years, he has dedicated himself to raisingthe bar in Aged Care meals, setting new standards of excellence. His culinary style is heavily influenced bymodernist cuisine, incorporating current food trends to create an unparalleled sensory experience. David'sunwavering commitment to innovation has garnered him numerous national awards, including a remarkable 2ndplace in a prestigious National Cooking Show. He has had the honour of speaking at the esteemed events like the National Aged Care Catering Summit 2023, where he showcased the groundbreaking work taking place at St Vincent's Care Kew, establishing themselves as leaders in the industry. David's culinary talent has also been recognised through his participation in esteemed competitions such as the National Chef of the Year Competition 2023, where he achieved the distinction of being a finalist in the Top 32 (one of only 2 Aged Care Chefs). Additionally, he achieved 2nd place alongside Harry Shen for their outstanding Sous Vide Crispy Chicken Breast dish at the IHHC Culinary competition in South Australia in 2023. More Recently he has Competed at the London Culinaire Salon 2024 where alongside Harry Shen took home 2 Slivers against the world's best chefs as they were the only aged care chefs in the world to do so. David and his team took home Gold Standard Second overall and Best Dessert in Competition at the ACF Restaurant Challenge 2024 at Food Service Show Held in Sydney ICC.
